RECIPE: Elderberry Syrup

Elderberry is antiviral, which means that it interrupts viral replication preventing proliferation in host cells.

Elderberry is antibacterial.

I had been making elderberry syrup for several years before moving to East Texas in 2015 and discovering to my excitement that there was a wild elderberry grove on our property. My recipe for elderberry syrup is kind of kluged together from other recipes I've seen. One of these days, I will make elderflower syrup also. It can be mixed with carbonated water to make a refreshing sparkling elderflower drink.

2-4 half-pint, 2 pint, or 1 quart sized canning jars.
